This past weekend was probablly one of the best weeks of my life. I had a million and and one things going on but I absolutely love being busy. I had my art show, festival of the arts (basically a talent show), hairspray rehearsal, set up for the school dance, spring formal and OGTs (the only bad part of my week). To top off the best week ever, my mom made new recipes for dinner every night of the week. All of the recipes she made were simple, but they were restaurant worthy meals!
On monday, my mom made chicken marsala meatballs. If you love italian food, you have to make this recipe. I actually don't have the exact recipe but I'm sure a quick google search will lead you to this promising dinner. I had roasted some spaghetti squash earlier in the week that paired perfectly with this dinner. I also had some toast with avocado on the side because...well I can't go a meal without some carbs and healthy fats. ☺
We also recently received the new Cooking Light magazine which is where my mom got most of these recipes that she made this week. If your ever in a pinch in terms of time and want to make a healthy meal, I highly reccomend you subscribe to their magazine or browse their website. Their recipes are simple, inexpensive, and most take less then 30 minutes.
From the latest issue, my mom made, spring pasta with rotisserie chicken, pork chops with roasted potatoes and shallots, pork medalians with peanut rice and asparagus, and mediterranean tacos. My favorite of these three was by far the pasta with rotisserie chicken. Maybe I was just in the springy mood, but this pasta just brightened up my day. Even though it was30 degrees outside when it was supposed to be spring.
As if these meals weren't enough, my mom also catered and hosted the dinner before my spring formal dance. Everyone needs to give a round of applause for my mom right now. I think we have a winner for the "Mom of the Year" award. We had a potluck-ish type of dinner so she made a bunch of little snacky foods. She put together spinach artichoke dip, veggies and dip. caramel-toffee-cream cheese dip with apples, lemon raspberries tartlettes, and peanut butter oreo bars. The food was great and I had a super time with my friends.
I usually hate school dances, but this year the dance was super low stress and I went with an amazing group of friends. An added plus was that I only spent $20 dollars on my dress Thank you TJ Maxx! The dance itself wasn't super fun but the before and after made up for it. What can I say, when food is involved, I'm happy.
