Homemade granola bars are my latest obsession. I love the idea of a grab and go snack and I usually gravitate towards foods that are filling, yet portable. The granola bar fits this criteria perfectly. There are some great whole-food granola bar brands out there nowadays, but if you don't get them on sale your wallet will thin out pretty quickly. I also love making my own homemade bars because I can custimize the flavor to fit whatever mood I'm feeling.
With this recipe, I tried to create a flavor that you couldn't find in stores. At first, I was a little wary about how the flavors would mix, but I was extremely happy with the results. The tumeric and the cinnamon give these little guys a warm, ethic flavor that compliments the toasted nuts and seeds. The freeze dried peaches add a perfect punch of sweetness and nutrition to the combo. If you can't find freeze dried peaches though I bet dried mango would be fantastic! In fact, I might make another batch with some mango--I guess I better get back to the kitchen. ☺
Tumeric Peach Granola Bars
Ingredients:
1 cup oats
1/4 cup brown rice crispies
1/4 cup love grown foods original cereal
1/4 cup almonds
1/4 cup cashews
2 tbsps pepita seeds
1 cup sticky medjool dates, pitted
2 tbsps chia seeds
1/4 cup honey
1/4 tahini
1/4 tsp tumeric
1/4 tsp cinnmon
1 package of freeze dried peaches (I found mine at target)
Instructions:
1. Preheat oven to 350 F. Toast oats through pepita seeds on a baking tray for 5-7 minutes or until slightly browned and fragrant. This step is optional but results in a nice nutty flavor.
2.Place dates in the food processor and blend until a dough like shape forms.
3. Combine toasted cereal/nut/oat mixture with the chia seeds and the freeze dried peaches. Add in the date mixture and use your hands to incorporate the dates into the cereal. Be careful the mixture will be hot.
4. Heat the honey, tahini, cinnamon, and tumeric in a small pot over medium heat, stirring constantly. Once mixture looks smooth and melty, pour over top of cereal mixture and mix well.
5. Press mixture down into an 8x8 or 9x11 inch, parchment lined pan. Wet your hands so the mixture doesn't stick when you are pressing it down.
6. Place in the freezer for about an hour and slice into bars
Bars can be kept at room temperature for about a week. For prolonged shelf-life, store in fridge or freezer. I actually prefer mine chilled.
