I don't know about you but I love to snack. Some of my favorite snacks are greek yogurt with fruit, veggies with hummus or peanut butter, homemade muffins, and protein bars. Some of my favorite bars are KIND strong bars and regular bars, ALT bars, and larabars. The only con to buying these bars are their expense. The good thing is you can make your own for a lot cheaper and add in you favorite flavors. Here's the recipe:
Peach Pistachio Snack Bites
Makes 18-20 bites
Ingredients:
1/2 cup shelled pistachios*
1/2 cup almonds*
1 single serve package of freeze dried peaches*
2 tbsp cashew butter*
1 3/4 cup dates soaked in about 1/4 cup water
Method:
Soak dates for about 10 minutes. Place all ingredients in the food processor (including remaining water from soaking dates) and pulse for about 2-3 minutes or until a dough forms. Mixture should be chunky. Use an icecream scoop to form 18-20 balls and place into a container. I like to store mine in the freezer but they can also be stored in the fridge.
*This recipe is very versitale so feel free to substitute any kind of nut, nut butter, or freeze dried fruit you like
