Where are all my Parks and Rec fans at? I am in LOVE with this show! I started watching it a few weeks ago and I'm already on season 5. I really need to ration my Netflix everyday so I don't run out of episodes to watch......
After seeing Leslie's waffle obsession, I started to crave some myself. The next morning I got out my waffle iron and whipped myself up some yummy waffles for breakfast. Unfortunately, I didn't have any whipped cream, but the almond butter made up for it! :)
Waffles
Yields 1 Belgian Waffle
2 tbsp oat flour
2 tbsp vanilla protein powder
3 tbsp greek yogurt
2 egg whites
pinch of baking powder and baking soda (I never measure)
sweetener to taste ( I use English toffee stevia drops)
While waffle iron is heating up, mix all ingredients in a bowl. When waffle iron is ready, spray with non-stick spray and pour batter in. Cook for about 4-5 minutes or until crispy. Top with fruit and almond butter. (or whipped cream :)
