This recipe wasn't supposed to happen. It all started with those darn black bananas on the kitchen counter. Every morning when I would get up to have breakfast, I would see a sad looking bunch of the once bright yellow fruit, get darker and darker. I absolutely DESPISE wasting food, so something had to be done about these bananas.
I immediatley went to the kitchen and started throwing ingredients into mixing bowls. I am going to be honest with you though, because I was making this recipe up on the fly the measurements might not be 100% accurate. Therefore, if your batter looks to thick or thin, adjust accordingly. Just trust your instinct with this recipe. I promise the ending result will still taste amazing. That's the awesome thing about breads/muffins/bars, they are pretty forgiving when it comes to measurements. Just make sure you don't forget the baking powder and soda. ☺ (I've done that too many times and I have finally learned my lesson).
Another great thing about these bars is you can acceptably eat them any time of day. They are packed with wholesome ingredients, protein, and superfoods OH MY! Although, I still won't judge you if you eat chocolate every morning for breakfast. Chocolate is good for the soul. Now that I think about it, one of these bars with a drizzle of chocolate would make an awesome breakfast. It's all about balance right?

Blueberry Banana Bars
Wet ingredients:
3 spotted/black bananas mashed
2 egg whites
1/3 cup greek yogurt sweetened with 4 drops of vanilla stevia
1/3 cup unsweetened almond milk
1 tsp vanilla
1 tbsp chia seeds
Dry Ingredients:
1/2 old fashioned oats
3/4 cup oats ground into a flour (if using oat flour reduce amount by 3 tbsps)
1 tsp baking powder
1/2 tsp baking soda
Add ins:
1 cup berries (I used blueberries but strawberries or raspberries would work too!)
Method:
Preheat oven to 350 F. Spray an 8 by 8 inch square pan with spray. Mix wet ingredients and dry ingredients in seperate bowls. Pour dry ingredients into the wet and mix until just combined. Stir in blueberries and pour into pan. Cook bars for 25-30 minutes or until a toothpick comes out clean. Let cool completely before cutting into bars. Store bars in the fridge or freeze unless you are planning to eat them that day.
