Happy November! October flew by wayyyy to fast! I just realized today how soon the holiday season will be here. In order to prepare myself for the upcoming season, I decided to expiriement with making my own homemade jam. I have made blueberry jam in the past and it turned out great. With a few minor changes I created my very own Cranberry orange chia seed jam. Now, I know what you're thinking...Why chia seeds? The chia seeds absorb the liquid from the orange and the cranberry and give this recipe the perfect consistancy. Chia seeds can be a turn off for some people. I must admit I was very hesitant the first time I used them. The only thing I could think of was "CH-CH-CH-Chia!" but surprisingly I fell in love. They give such a unique texture and the heatlh benefits are endless with these super seeds.
I love this recipe because it can be used in both savory and sweet meals. It can also make a pretty mean pb&j with some pumpkin spice peanut butter. Okay now I'm drooling....

Recipe:
Makes about 2 cups
Ingredients:
2 1/2 cups fresh or frozen cranberries
1 large apple
Zest of 1 orange
1 tsp vanilla
1/2 tsp cinnamon
Juice of an orange
1 cup of water
1 1/2 tbsp of chia seeds
5-10 drops of liquid stevia (depending on how sweet you want your jam)
Combine all ingredients except chia seeds in a large pot. Turn on heat to high until mixture comes to a boil. Stir every once in a while to prevent from burning. Turn heat to medium and cook for about 7 minutes until cranberries have softened. Take half of jam and place it into a blender. Pour back into pan with the other half of the mixture. Add chia seeds and let cool. Place into jar and refridgerate for at least 2 hours before eating. Enjoy!
