I hope everyone had a great holiday this past weekend. Usually the holidays are a very stressful time for my family, but this Easter was much more laid back and a lot more enjoyable. The weather was absolutley BEAUTIFUL! My whole family spent the whole day outside. We all slept well that night!
Aside from enjoying the weather this weekend, I was also baking up a storm! I come from a long line of great cooks, so the holidays always consist of excellent food. My mom made cheesy potatos and a lemon blueberry trifle, while I made the carrot cake whoopie pies and orange sweet potatoes. Of course my grandma went all out with the main dish which was nothing less than spectacular. (I can't remember ever having a bad meal made by my grandma;). Overall, everything turned out great and Easter dinner was a success!

Orange Sweet Potatoes:
6 large sweet potatoes
1 orange, juiced
1 tbsp orange zest
1 tsp cinnamon (or as much as you prefer)
Cook potatoes. (I was in a hurry so I cooked mine in the microwave and they still turned out amazing.) Peel skin and place in a large bowl with orange zest and cinnamon. Use a handblender and beat adding orange juice until desired consistancy. (I used the whole orange). Devour!

This recipe was super easy and can be made the night before. They were a big hit and sadly there weren't many leftovers. Along with these potatoes, I also made carrot cake whoopie pies. I found the recipe in the April issue of my Cooking Light magazine. They were the perfect dessert to satisfy my sweet tooth.
Carrot cake is probably my all time favorite dessert and these cookie sammys didn't disapoint! I am not a huge icing fan but cream cheese frosting always has a place in my heart.
