I had another day off of school. I am sick and tired of this cold winter weather. Bring on the sunshine and warm temps because this -20 degrees is killing me! My school already has a full week of snow days to make up this summer. Yeah...no fun. As you may already know (at least I would hope so if you are looking at this blog), I love to bake and it has consumed every bit of my free time in the last few weeks. The first thing I baked this week was actually not baked! The irony is killing me. I made Healthy Happy Mama's chia jam filled raw brownies. Just reading the recipe made my mouth water so I knew I would have to make these for valentine's day. These were not as easy to make as I anticipated. The dough kept falling apart and it was hard to layer the brownie mixture between the jam. In the end, it resulted in a huge mess, but a yummy mess nonetheless. The tart jam was a perfect complement to the sweet date brownie mixture. I think if I made these again I would make them into jam filled truffle shaped balls because it was nearly impossible to make them look appealing by cutting them into bars.
I also made Arman's microwave english muffin for breakfast this past weekend. Instead of almond flour I used PB2 and I added in a little pumpkin puree. I am usually hesitant to try mugcakes because I have had some pretty nasty ones in the past. This recipe actually turned out very well in terms of mug-recipes. I don't know if I would can it an english muffin. I think breakfast cake is better fitting but I would make this recipe again! It was super easy and when paired with yogurt and nutbutter it kept me full for several hours. Go check out Armans blog! All of his recipes are on my to-make list.
The next recipe was kind of a flop. I have always wanted to try to cook tofu but it has always intimidated me. In the past I have only used tofu in Chocolate Covered Katies chocolate pie (which by the way is delicious and is on my to-bake-again list) but I have never made a savory recipe with it. When I came across this Maple and Balsamic tofu recipe I was determined to make a tofu recipe that would actually taste good. The pictures had me convinced that I would fall in love with it. I was quite disapointed with how it turned out though. It did not crisp up and in the end it almost tasted like pancakes. I like pancakes but not in tofu form. I won't be making this again, however, I am still determined to find the holy grail of tofu recipes.
