Hello!!! I'm so excited to start this blog! And what better way to celebrate than cookies???? It is a rainy day here in Ohio and I needed something warm and comforting to snack on. After spending way too long on pinterest, I finally came across a pumpkin cookie recipe that was sure to be a winner. These cookies are surprisingly VEGAN! Sometimes vegan baking can be a turn-off but trust me these are to DIE for!
Vegan Pumpkin Cookies with Chocolate Covered Apple Bits
Recipe adapted from http://kblog.lunchboxbunch.com/
1 1/2 cups 100% whole wheat flour (you can sub white. I just had this on hand)
1 1/2 cups rolled oats
1 tsp cinnnamon
1 tsp salt
1 tbsp baking powder
1 cup pumpkin puree
1 chia/flax egg (1 tsp flax, 1 tsp chia seeds, 1/3 cup water)
1 tsp apple cider vinegar
1 tbsp melted coconut oil
1/2 cup chocolate covered apple bits (I used Snaque brand)
Directions:
1.Preheat to 375
2. Combine wet and dry ingrediants
3. Stir in apple bits
4. Put in freezer for 10 mins (To allow dough to firm)
5. Roll into balls and place on a parchment covered cookie sheet
6. Bake for 10-12 minutes until slightly brown on bottom.
7. Cool on a cooling rack for about 10 minutes and EAT UP!

I'm telling you these cookies are amazing! My dad went back for seconds, and then thirds. He loved them and begged me to make them again. So head to your kitchen and get baking!
