I survived my first week back to school! WOOHOO! (and by first week I mean 3 two hour delay days and 2 cancellations...) Unfortunatley, those days off were spent doing hours of homework and studying in preparation for next week's exams. I'm really not loving the exams after winter break. We have always had them before which I like so much better. It just adds too much stress to the new year in my opinion. In order to keep myself sane I have been cooking and pinning up a storm.
The first new recipe I tried this week was Hummusapien's cinnamon raisin date bites. Just like all of Alexis' recipes, this one does not disapoint! We were all out of raisins so I used medjool dates. I was really impressed how much they actually tasted like brownies. Normally when I hear of a healthy brownie/cookie recipe there usually is a "health food" taste to it. These however were the perfect little dessert. I crumbled some up and used the crumbles as a topper for my yogurt. It kind of reminded me of a DQ cookie dough blizzard. Yeah. Good Stuff.
The next recipe I made was The Real Life RD"s vegan banana bread muffins. I have three words to describe these little guys TO DIE FOR. In the past, I have tried millions (ok maybe a slight exaggeration) of banana bread recipes but, this one just has something special about it. Origanally I hadn't planned on making them but the black bananas on my counter were begging for some attention. I quickly whipped up a batch of these muffins in 20 minutes. I love when a recipe is delicious, quick, and easy to clean up. The trifecta of successful baking. Not only were these muffins approved by me, my little brother (who eats only bread and cheese) loved these muffins. My jaw dropped to the floor when he gave me his approval. He even went back for seconds! Now thats a good muffin.
One last thing I have to share. Panera added some new asian inspired "broth bowls" to their menu. I just heard about this last night and you bet I ate there for lunch today. I ordered the edammame soba noodle bowl. This tasted like Grown Up Ramon Noodles. No joke. I will definitley be making frequent trips to Panera now.
