Happy Tuesday everyone! I hope everyone enjoyed their day off of work and school yesterday. My day was filled with homework and baking. What a surprise. ;) I also had Friday off of school which was much needed after a week full of stressful exams. I used my extra time off to whip up a few meals from my pinterest board.
Recently, I came across the blog "Inspirilized.com" and it has become my new go-to website for quick and easy meals. I was so excited to finally use the spirilizer that has been sitting on our basement shelf collecting dust for a about five years. (Don't worry, I cleaned off the dust). It is definitley the coolest kitchen gadget out there! It makes getting in your veggies easy and fun rather than forcing a spoonful of peas onto your dinner plate. Don't get me wrong, I love me some peas but something about curly butternut squash fries just pulls you in. You feel me?
The two recipes I made from inspirilized this week were tuna salad with spirilized apples and pork with cherry sauce and butternut squash noodles. Both were very fresh and easy. I ate the tuna salad on ezekiel bread for lunch everyday last week because it was that good! The pork with the cherry sauce and butternut squash noodles was also a family favorite. My mom and I made a few minor adjustments to the sauce and the results were fantastic. We added a little bit of dijon, balsamic, and honey to the sauce for a little extra punch. This is going on the "make-again" list.
I also made Oh She Glows high protein pesto. Unfortunatley, this recipe wasn't my favorite. It wasn't Angela's recipe though, it was this stupid winter season that prevents me from getting fresh and aromatic basil! I didn't have quite enough basil, as most of the leaves were brown and tasteless so I substituted in some arugula. Not a good substitution on my part. The arugula was a little too peppery and it overpowered the sweetness of the basil. Oh well! You can't also win. But nothing some good ole' scrambled eggs and hummus can't fix. I simply toasted an ezekiel tortilla, added some pesto, and topped it with scrambled eggs, tomatoes, and hummus.
Finally I made some pumpkin zuchinni muffins that were bomb.com. I will be sharing the recipe with you all later this week. I was super proud of myself for putting together a muffin recipe without it completely failing. The last time I attempted a muffin recipe the muffins shrank even though I put in the baking powder. I guess baking is all just trial and error. Well that is all I have for this week! Check back later this week for the muffin recipe.
