Where the heck did January go? I cannot believe that it is already one month into the new year. Time flies! This week I had a little more free time than I usually do so I was busy in the kitchen whipping up some new and exciting new recipes. First up was Ambitious Kitchen's vegetarinan black bean chili stuffed sweet potatoes. This was a big hit at my house. My mom made homemade guac and shredded some fresh monetrey jack cheese to top our potatoes with. She is the best.
This week I also made my sister a batch of crepes. Those who know me know that I am a french girl at heart. The weird thing is I actually don't care too much for crepes. I am more of a pancake girl myself but being the good sister that I am I made my sister a beautiful plate of crepes.
I also made some peach crisp and peach pistacio snack bites but I will be posting those later this week so stay tuned!
