No matter which way you slice it, pizza will always have a special place in my heart. I mean what's not to love? Cheese, crispy crust, and all of the toppings you could ever want? I'm in!
This pizza is a little more sophisticated than your typical cheese and marinara pizza. In fact, this pizza has no sauce whatsoever. Don't let that turn you away though! The balsamic glaze with the sliced apples and caramelized onions takes this pizza to the nest level. You won't miss the sauce at all.
Another great aspect of this recipe is it requires no waiting time for the dough to rise. Call me lazy but homemade dough takes a little too long for my hungry stomach. Instead of making the dough from scratch, I picked up a pre-made refridgerated whole wheat pizza dough from Trader Joe's. Joe's always coming in clutch when it comes to my grocery needs.
Chicken, Apple and Caramelized Onion Pizza with Goat Cheese
Ingredients:
1 package of refridgerated pizza dough (I used whole wheat but any kind will do!)
extra flour for kneading
grilled chicken cut into bite sized pieces
2 slices pink lady apples
1 onion chopped
goat cheese
balsamic vinegar
olive oil
Instructions:
Preheat oven to 450 F. Take dough out of the refridgerater for about 15-20 minutes. Meanwhile, stautée onions in a pan with olive oil until softened and caramelized (about 5-7 minutes). Flour a pizza stone and knead the dough with a few tablespoons of flour until it is no longer sticky. Form dough into a large circle on the pizza stone. Top with cooked chicken, sliced apple, onions, and goat cheese. Cook in the oven for about 8-10 minutes or until cheese is slightly melted. Drizzle pizza with balsamic vinegar and serve.
