Friday the 13th, Pi day, and The Ides of March all in one hetic week! A super busy week call for major Sunday food prepping and pinning quick recipes. Last Sunday I spent my entire afternoon cooking and thank god I did! I didn't have a lot of time to cook and it was nice to just be able to grab a quick meal out of the fridge. It also helps me tremendlously with packing my lunch for school. I've been in a turkey sandwich lunch rut but these new recipes gave me some variety in my lunches this week.
First, I made one of my favorite recipes of all time, Hummusapien's vegan pinto bean and chard enchiladas. These were super easy and so flavorful. I made up a full batch and stuck half in the freezer for future use. I portioned the other half into individual containers for grab-and-go meals for later in the week. I also made Hummusapien's skinny tofu lasagna. If you read my post from a few weeks back, you know about my complicated relationship with tofu. The texture really freaks me out sometimes. In this recipe you crumble the tofu and mix it with garlic hummus to form a ricotta-like texture. This technique has convinced me to jump on the tofu bandwagon. If you love lasagna, you will love this recipe. Heck, even if you don't love lasagna, you will STILL love this recipe. The ingredients were cheap and easy to find. The recipe can also be adapted very easily to fit your preferences. I added some additional mushrooms and spinach to mine. I highly suggest adding mushrooms. It almost gave it a meat-like flavor.

For Sunday Night's dinner my dad made a beef roast with potatoes, carrots, and peas. I love dipping bread into pot-roasts so I decided to try out Love Me Feed Me's sweet kobocha squash rolls. (Does anyone know how to pronounce the "kobocha"?) They were the perfect accompaniment to the stew. I also popped half of these babies into the freezer to store for later in the week.
On Monday night, I came home to this gorgeous plate of food made by my mom. She made The Healthy Maven's goat cheese-sundried tomato- and spinach chicken roll ups. This recipe made me love goat cheese even more than I already do, which I didn't think was possible.
Finally, I wanted to share with you my opinions on the Western Bagel Company, who recently sent me free samples of their products. I received a package of their plain, whole wheat, cinnamon, and onion alternative bagels. I was nearly jumping up and down in excitement when I opened the package. I first tried the whole wheat bagel as a bagel sandwich for lunch. The bagel was the perfect size and toasted up nicely. I topped it with some grilled chicken, hummus and avocado for a nutritous lunch. I loved this flavor. Sometimes wheat bagels can have a tough texture because of the bran, but I was highly impressed with the chewy texture of this brand. I also tried the cinnamon flavor for breakfast this morning with some almond butter smeared on top. This flavor was similar to the wheat but with a slight hint of cinnamon that went perfectly with the almond butter. I am so impressed with their flavors so far, I can't wait to try the others.
