If you have been following my weekly shares you may have noticed that I missed a couple of weeks. My New Year's resolution was to post my favorite recipes/blogs/life related topics onto my blog each week. I don't think I have ever kept a New Year's Resolution this long so I am actually really proud of myself. Besides, who actually keeps their resolutions all year long anyway?
Life has been super busy lately, but I am loving every minute of it. However, his week is my spring break so I will have plenty of time to post and catch you all up by sharing some delicious recipes and links.

First, I want to share a simple recipe that my mom created. My family has been eating it as a side for a dinner for the past few weeks and I can't get enough of it. She sautees 1 chopped onion, 1 chopped bell pepper, and 5-10 chopped baby bella mushrooms for about 5 minutes until soft. Then she adds 1 package of broccoli slaw and mixes it into the veggies. Finally add a few tablespoons of dijon mustard. (I think she uses about 2). Remove from heat and eat! This makes a pretty big batch but the leftovers are perfect for lunches the next day. This recipe keeps for about a week which is never a problem in my house because the slaw is gone by the next day!
The other day when I was scrolling through my Bloglovin' feed I came across Hummusapien's recipe for salted chocolate chia popcorn balls. She had me at salted chocolate. Of course I was drooling the second I saw this recipe and showed it to my mom. Later that night I had friends over after hairspray rehearsal and came home to a batch of these babies. These popcorn bites are a peanut butter cup and caramel corn combined into a delicous dessert. My only suggestion is to eat them on the first day because storing them in zupperware can make the popcorn soggy. This dessert is perfect because it tastes so indulgent but it packs in the nutrients with the cacao powder and chia seeds.
