Warm weather is finally here! And by warm I mean 40 degrees. Along with the warm weather comes longer days. YAYY! (even though I did have to give up an hour of my precious sleep for it!) Despite my busy schedule I did squeeze in a little time in the kitchen to try some new recipes. The first recipe I made (actually my mom made it but I picked it out) was from the iFOODreal blog. We made the thai turkey zucchini meatballs. I have been wanting to try some new ethnic foods lately and this was the perfect recipe to start with. It came together in less than 30 minutes. The sauce was super creamy from the coconut milk and the zucchini added a moistness (is that even a word?) to the meatballs. I loved all of the spices and flavors in this. This is a perfect alternative to your traditional chinese/thai takeout that will leave you feeling good afterwords.
The other recipe that I made this week was Hummusapien's broccoli cheddar chickpea bugers. These were also very simple to make. I made up a batch and put half in the fridge and half in the freezer to reheat for lunches. I am usually not a veggie burger fan but these impressed me. This recipe reminded me of Panera's broccoli cheddar soup in a veggie burger kind of way. They also taste amazing with hummus and avocado but then again, what doesn't taste good with hummus and avocado?
I thought this week for my weekly share I would also share my top ten favorite blogs. Note that this list is not in order nor is it limited to all of the blogs I follow. Honestly this was extremely hard for me to choose a top 10. As you have probablly heard me talk about before, I use the bloglovin' app on my iphone and I follow nearly 100 blogs. It takes up a lot of time, but in my opinion, time well spent. We all need a little chill time and my time just happens to be spent looking at drool worthy food blogs through my phone screen.
Enough chitchat. Let's get to it!
1. Hummusapien
Alexis is by far my favorite blogger of all time. She posts amazing recipes that require easy ingredients and not a lot of time in the kitchen. Most of her recipes are vegetarian or vegan with a few pescetarian recipes thrown in. I absolutley love all of her WIAW posts and I often use her meals for lunch inspiration. Some of my favorite recipes from her are: Skinny Whole Wheat Lasagna, Vegan Enchiladas, and Apple Carrot Muffins.
2. Nutrition Happens
I first found the genius behind Nutrition Happens on instagram through her stunning food pictures. May is the sweetest and she has a niche for finding strange but delicious combinations that will have you looking forward to your next meal. Not to mention the beautiful pictures she posts of the gorgeous Charleston, SC.
3.Chickpea in the City
I recently stumbled upon Addies blog after following her instagram account. Her food literally makes me drool. Not joking. I love how she posts her favorite food products because I am always looking for new brands to try. Addie also has a section on her blog dedicated to Cleveland resturant reviews which is AMAZING because I live about an hour and a half away. This is an awesome blog for all of you Ohio peeps out there.
4. Cait's Plate
Cait's Plate was one of the first blogs I followed and is one of the reasons I started my own blog. I also found her on instagram (see a trend here?). One of my favorite things about her blog are her "Healthy Eats on a Budget" posts. Sometimes it seems impossible to find affordable health food and her blog will help you eat great, nutritious food without cleaning out your wallet. Cait is also a Bostonian and I am now considering (more like dreaming) about moving out there after high school because of her blog.
5. The Nutritious Kitchen
Get your sweet tooth ready because this blog will have you baking in your kitchen as soon as you open up her blog. Selena from the Nutritious Kitchen makes the most drool-worthy healthy desserts out of all of the blogs I follow. I recently made her chocolate pistachio cookies and they turned out perfectly fluffy. All of her recipes are also on my to-make list.
6. Kath Eats Real Food
Kath also has amazing photography that I am totally jealous of! ;) She posts daily which is awesome for a blog obsessed foodie like me. I love her "real life" approach to blogging. Her blog was another blog that inspired me to start my own.
7. Daily Moves and Groves
Allison is an amazing writer and don't even get me started about her oatmeal pictures. ►Swoon◄ That nutbutter gets me every time! Being a college student, Allison gives great advice about balancing school and her social life as well as food related topics. Her dinning hall at school puts my school cafeteria to shame.
8. In it For the Long Run
I love Georgie's blog! She has amazing recipes and her witty posts always make me smile. She is a professional smoothie maker and I envy her skills with the blender. She also has some great posts about the Whole 30 diet for those who are intrested in it.
9. The Real Life RD
If you have ever struggled with disordered eating, body dismophia or just lost in terms of healthy eating, Robyn's blog is for you. She is incredibly knowledgeable about nutrition and her insight on so called "dieting" has helped more improve my balanced approach to food. Robyn also has the BEST healthy brownie recipe on her blog that I make a batch of nearly every week.
10. The Little Honey Bee
Last, but certainly not least is The Little Honey Bee. Amy also has an incredible knowledge of nutrition and excercise. She recently posted about finding balancing while traveling that everyone needs to read right now. I love her simple but delicious approach to food and she also makes a mean ratatouille.
