Welcome to my first offical "What I Ate Wednesday" post! (I am actually writting this on Monday...shhhh don't tell anyone). Please keep in mind that I am only doing this as inspiration for meals. I know with social media it can be easy to compare your diet to other peoples but keep in mind that everyone is different and has different nutritional needs.

First up is breakfast, the most important, and best meal of the day. I could eat breakfast food for every meal for every day of my life and never get sick of it. That being said, if I don't eat breakfast, stay away from me. This morning I woke up to almost 8 inches of snow with drifts all throughout my yard. My school was cancelled so I had a chance to snap a picture with good lighting. I toasted 2 slices of cinnamon raisin ezekiel bread and spread some Peanut Principal Brain Blend nutbutter on top. I also had some 2% greek yogurt with berries. I could just feel myself getting smarter with every bite of that peanut butter toast. ;)
After breakfast, I helped my dad and brother shovel our driveway. I had no idea until today how heavy snow can be. Talk about a workout! Then I came back inside and spent what was supposed to be a few minutes (turned out to be an hour...) on bloglovin'. I just discovered this app and am already addicted. I had to peal myself from the computer screen to hop into the shower. After getting dressed and cleaning up around the house, I made myself some lunch. I had a toasted pita with half an avocado, chicken, and roasted red pepper spread with carrots, tomatoes, and hummus mixed with sunflower seeds. I love the crunch the sunflower seeds give to dishes. For some reason the hummus-sunflower seed-veggie mix makes me think of "ants on a log".
After lunch, I began to get bored. All of my friends think I'm crazy when I tell them I hate snowdays but I am the type of person who always has to be doing something. I also hate being stuck in the house all day. For an afternoon snack I had a single serve package of Sanfranola granola with raspberries and cashew milk. This hit the spot. I had been craving cereal all week long and there's something about a bowl of cereal that just puts me in a good mood. In fact, I had the urge to run, which is totally unheard for me. Of course it was only 20 degrees outside so I decided to challenge myself to run a mile of the treadmill. I ended up running one mile and walking another. Mission accomplished! It wouldn't have been possible if it weren't for New Girl on netflix.
Last night for dinner my mom made buffalo chicken stuffed sweet potatoes. We decided to use the leftover chicken to make tacos. It was actually all Mom's idea. What can I say, mom always knows best. It was a super weird combo but to my surprise it turned out pretty good. I had 2 corn tortillas with black beans, avocado, buffalo chicken, tomatoes, and a little blue cheese. I also had some peppers and brussel sprouts. Talk about random.
For dessert I had my usual combo of an apple, a homemade brownie, nutbutter and chocolate. Don't fix what's not broken, right?
